For me personally the 1:1 flours are cheapest for me to maintain Thelma to my demands and i use the single grain flours and starches in my bread recipes where they are called for, i will include 2 recipes to get started with instructions to reactivate and maintain Thelma. Thelma is usually reactivated and ready to use in 24-48 hours depending on your environment.
